Roasted red pepper spread with ZANAE peppers

Servings: 4-5
Preperation time:
Difficulty: Easy

What you will need:

  • 1 jar of ZANAE roasted red peppers (drained)
  • 1 garlic clove
  • 2 tbsp cashews (or walnuts)
  • 2 tbsp grated Parmesan
  • 2-3 tbsp olive oil
  • Salt & pepper

Instructions:

  1. Put all ingredients in a blender or food processor.
  2. Blend until you get a smooth, uniform mixture.
  3. Taste and adjust salt or texture (add a little more olive oil if needed).
  4. Serve as a spread on bread, dip for breadsticks, or sauce for pasta.
