Rustic Pasta with ZANAE Tomato Paste

What you will need (for 2 people):

  • 1 pack of ZANAE tomato paste 200g
  • 250g spaghetti
  • 2 fresh onions
  • 2 cloves of garlic
  • 1 green pepper
  • 1 yellow pepper
  • 1 red pepper
  • 25g ouzo
  • 100g olives
  • 50g capers
  • Thyme
  • Oregano
  • 100g feta cheese

Let’s cook:

  1. In a pot of boiling water, add salt and cook the spaghetti according to the package instructions.
  2. Heat a frying pan and add a little olive oil.
  3. Chop the fresh onions and garlic into thick slices and sauté until they get a nice color.
  4. Add the bell peppers, chopped into large pieces and stir.
  5. Once the peppers soften a bit, deglaze with ouzo.
  6. Add the ZANAE tomato paste, olives, capers, and let the mixture cook in the pan for 3-4 minutes until the sauce thickens.
  7. Drain the spaghetti and add it hot to the frying pan, mixing well and adding oregano and thyme.
  8. Stir and serve. Grate feta cheese over the pasta. Add more herbs, pepper and salt as desired.
