Velvety Soup with ZANAE Concassées and Carrots

What you will need (for 2 people):

  • 2 cans of ZANAE concassées
  • 2 finely chopped onions
  • Finely chopped celery
  • 1kg carrots, sliced thinly
  • 250g boiled potatoes, diced
  • 5 bay leaves
  • 500g cherry tomatoes
  • 2 vegetable stock cubes
  • Brown sugar
  • 250ml milk

Let’s cook:

  1. In a large pot, add oil, onions, celery and sauté them.
  2. Add the carrots, potatoes and sauté for a few more minutes.
  3. Add the cherry tomatoes, ZANAE concassées, vegetable stock cubes, a teaspoon of brown sugar and bay leaves. Let it simmer for 40 minutes.
  4. Remove the bay leaves and blend the soup with an immersion blender until smooth.
  5. Add the milk and more water, if needed, to achieve the desired consistency.
