Kritharoto with ZANAE Concassées and Roasted Red Peppers

What you will need (for 2 people):

  • 1 can of ZANAE concassées
  • 1 jar of ZANAE roasted red peppers
  • 1 onion
  • 500g orzo
  • 80g grated parmesan
  • Pepper
  • Salt
  • Smoked paprika

Let’s cook:

  1. Heat a pot on medium temperature, add olive oil and sauté the onion, seasoning with salt until softened.
  2. Add the orzo and cook until lightly toasted for a few minutes.
  3. Pour in water, bring to a boil, then reduce to medium heat, stirring regularly until the orzo becomes creamy and cooked, about 10 minutes.
  4. In a blender, add the ZANAE concassées, roasted red peppers, onion, parmesan, pepper, salt, paprika and blend into a paste.
  5. Sauté the mixture in a pan and then add it to the orzo, stirring to combine.
